This is natural selection in action, albeit resulting from a anthropogenic causal factor i.e. the bleaching of the coral. The orange fish are more poorly camouflaged against the white rock, so more of them are eaten, and less survive to reproduce. This means more white fish reproduce and have white offspring, and over several generations this results in more white fish than orange.
