Miguel Hidalgo y Costilla, also known as "Father Hidalgo", was a Mexican Catholic Priest and one of the leaders of the Mexican War of Independence.

As a priest, his duties saw him settle in the town of Dolores in 1803. He spent much of his time there educating himself in agricultural methods such as grape cultivation and the raising of skill works. he would later use this knowledge to promote economic activities that would help the poor people who lived in that area to improve their living conditions.
