This only exemplifies that the almost instant alertness that Demarcus feels everytime he gets the chance to smell a freshly brewed coffee is mostly psychological. Psychological effects are effects happening only in the mind of a person. Demarcus developed a psychological effect towards the smell of coffee because of his mind's association of its smell to the feeling of being stimulated or alert.
