In animal cells, vacuoles are less important so the main problem would be trouble storing water. In plant cells however, they have an important role. If the vacuole was damaged in a plant cell, the turgor pressure (force that allows plant stems to stand upright) would be out of whack. The plant would become very limp and could die as a result.
