They are unique in there process of formation as they are formed with head to head linkage between elements of glucose with anomeric(the carbon atom contains -OH)  alpha(the carbon right next to the one connected with the functional group)carbon is attracted to the fructose's beta(Second carbon to the functional group linkage) carbon with the anomeric thus OH- and  H+ are combined to give water molecule and as a result the Sucrose is formed
