Thawing in this context refers to the process of making frozen product into normal temperature so it can be consumed.

There is no difference would occur to your body in consuming the foods soon after thawing or consuming it after a while. You just need to ensure that the food does not become too hot.

Thawing in cold water requires more attention because the food is placed in the plastic bag or leak-proof package and if the container leaks then the bacteria from the surrounding environment or the air can enter into the food.

When the food is thaw by the use of a microwave oven, it produces uneven heat patterns. Some sections of food cooks before the other sections totally thaw. The partially cooked food is not good because it might be possible that bacteria may be still present in it and start growing when they reach optimal temperature.
