The major functions of the stomata is to allow for exchange of gases and transpiration. During photosynthesis, plants take in carbon dioxide and release oxygen to the environment. This gas exchange takes place through the stomata. So also, during the day, when the temperature is high, plant loses water to the atmosphere during transpiration by evaporation. The guard cells that surround the stomata close up when the plant is loosing too much water otherwise they remained open. Thus, the guard cells serve to control the amount of water that is lost by the plants thorough the stomata.
