As fruits produced on a commercial scale need a series of requirements, due to their use: commerce, or you will not be able to buy accumulated fruit, with a degenerative appearance, and green on top, and this also applies to fruits.

But a chemical compound is used especially to solve this problem, it is Ethylene, now know this organic ingredient and how it ages as fruit:

<u>Ethylene</u> is a gas responsible for the ripening of fruits, it works as a hormone, it is produced from the cells and it is present in the entire structure of the fruit, from a peel to its interior.

<u>There are 3 reactions that happen during the fruit ripening process: </u>

Oxidation of lipids: This reaction is produced by ethylene and is responsible for breaking the fibers of the fruit, making it soft;

Breaking of the starch bonds: The sweetness of the ripe fruits appears at this moment: during the breaking of the starch bonds present in its composition;

Breakdown of chlorophyll molecules: Ethylene is also responsible for breaking down chlorophyll molecules present in the fruit's skin, which gives it a green color. After this reaction, depending on the fruit, the color is red or yellow.
