A food company produces raspberry coulis as a topping for its best-selling line, double strength chocolate mousse pie. Fresh ras

pberries comprising 5% seeds, 20% pulp solids, and 75% water are homogenised and placed in a stainless steel vat. Sugar is added to give a raspberry:sugar mass ratio of 3.5:1. The mixture is blended, strained to remove the seeds, then heated to reduce the water content to 35%. Half a tonne of coulis is produced every day.
Required:
a. What mass of raspberries is required per week?
b. How much sugar is required per week?
c. What is the sugar content of the coulis?

Answer:

5357.1429kg per week

2142.8571 kg per week

Explanation:

Given that :

Fresh Raspberries :

5% = seeds

20% = pulp solids

75% = water

Raspberry : Sugar = 3.5 : 1

Water content = 35%

Coulis produced per day = 0.5 tonnes

Mass of Raspberry produced per week :

Mass is measured in kg;

1 tonne = 1000kg

0.5 tonne = (1000/2) kg = 500kg

Mass of Coulis produced per week = 500kg * 7 = 3500kg

Coulis contains 35% water, Raspberry required 75% water :

(3500 / 35) * 75 = 7500kg

Raspberry : Sugar ratio = 3.5 : 1

Mass of Raspberry :

[7500 - (1 /3.5) * 7500]

7500 - 2142.8571

= 5357.1429kg per week

B.

Sugar required per week:

(1/3.5) * 7500kg

= 2142.8571 kg per week

C.)

Sugar content in coulis :

A solution has a hydroxide-ion concentration of 0.0040 M. What is the pOH of the solution? A solution has a pH value of 3.66. Wh
hodyreva [135]

Answer:

1. pOH = 2.4

2. pOH = 10.34

3. pH = 2.14

Explanation:

1. Determination of the pOH.

Concentration of Hydroxide ion, [OH-] = 0.004 M

pOH =?

pOH = - log [OH-]

pOH = - log (0.004)

pOH = 2.4

Therefore, the pOH of the solution is 2.4

2. Determination of the pOH.

pH = 3.66

pOH =?

pH and pOH are related by the following equation:

pH + pOH = 14

With the above formula, we can obtain the pOH of the solution as follow:

pH = 3.66

pOH =?

pH + pOH = 14

3.66 + pOH = 14

Collect like terms

pOH = 14 - 3.66

pOH = 10.34

Therefore, the pOH of the solution is 10.34

3. Determination of the pH.

Molarity of HCl = 0.0072 M

Concentration of Hydrogen ion, [H+] =?

Thus, we can obtain the concentration of Hydrogen ion, [H+] as follow:

HCl(aq) —> H+(aq) + Cl-(aq)

From the balanced equation above,

1 mole of HCl produced 1 mole of H+.

Therefore, 0.0072 M HCl will also produce 0.0072 M H+.

Therefore, the concentration of Hydrogen ion, [H+] in the solution is 0.0072 M.

Finally, we shall determine the pH of the solution as follow:

Concentration of Hydrogen ion, [H+] = 0.0072 M.

pH =?

pH = - log [H+]

pH = - log (0.0072)

pH = 2.14

Therefore, the pH of the solution is 2.14

(a) calculate %ic of the interatomic bonds for the intermetallic compound al6mn. (b) on the basis of this result what type of in
Tatiana [17]

The answer is:

a)0.25%

b) metallic bond

The explanation:

A) The percentage of ionic character in a compound having some covalent character can be calculated by the following equation. The percent ionic character = Observed dipole moment/Calculated dipole moment assuming 100% ionic bond × 100.

-The percent ionic character is a function of the electron negativities of the ions XA and XB .  The electronegativities for Al and Mn  are 1.5 and 1.6, respectively :

when %IC = [1-exp(-1/4) (XB-XA)^2].100

so, %IC =  [1  -  exp(- 0.25)(1.6- 1.5)^2] .  100 = 0.25%

(b) Because the percent ionic character is so small (0.25%) and this intermetallic compound is composed of two metals Al and Mn, the bonding is completely metallic.

Metallic bond:

• Metallic bonding can be either weak (68 kJ/mole or 0.7 eV/atom for Hg) or strong (850 kJ/mole or 8.8 eV/atom for W)

• Metallic bonding gives rise to high electrical and thermal conductivity.

-The electrons are loosely held since each atom has several unoccupied valence orbitals; it is relatively easy for the electrons to move about. In this manner the electrons allow atoms to slide past each other.
